Cari A. (Marcinek) Coffey, age 47, of Tom Wheeler Road, North Stonington, died Thursday evening at The Westerly Hospital.
Mrs. Coffey was born in Springfield, MA on January 14, 1958 the daughter of John Marcinek of Thorndike, MA and the late Patricia (McSweeney) Marcinek. She was a graduate of Palmer (MA) High School and the University of Massachusetts, Department of Food & Science.
She was employed as a Research Scientist in Food Technology at Pfizer for 14 years. She also assisted her husband with the operation of their business, Acorn Exterminating Co. In her spare time, she and her husband enjoyed working on their vegetable and exotic flower gardens, boating, and traveling during winter months in Mexico, the Caribbean, and Europe. She was also an accomplished gourmet cook.
She and her husband, William H. Coffey were united in marriage on September 12, 1981. In addition to her husband and father, she is survived by two uncles, Richard Marcinek of PA and Richard McSweeney of AL; her mother-in-law, Theresa Coffey of Lord’s Point, Stonington, her two beloved companions, Clancy & Maggie, as well as her many relatives and friends.
Her family will greet relatives and friends at The Dinoto Funeral Home, 17 Pearl Street, Historic downtown Mystic on Monday from 5-8pm. A Funeral Mass will be celebrated at Sts. Peter & Paul Church, 2267 Main Street, Three Rivers, MA on Tuesday at 11am. The Rev. Stefan Niemczyk will officiate. Burial will follow in the family plot in St. Thomas Cemetery, Palmer MA.
