Joe I will always remember you for giving me a chance to become your head chef at La Cippolina’s well actually I kind of fell into the position lol but you put up with me throughout all my antics and you instilled in me to be confident and trusted me to make delicious food for your customers. Because of you I went on to become a Garde Manger chef at the only 4 Diamond restaurant in a 4 Diamond hotel on the entire Gulf of Mexico coast at The Steakhouse in San Luis hotel on Galveston island. Working as head chef in Cambridge at your restaurant La Focaccia in Porter Square was the best gig ever even driving to work from Laconia a 150 mile round trip each day I loved working there. I will never forget you helping me when the Hell’s Angels threatened my life and I’m forever grateful to you for that. Me and big Joe had a love hate relationship but we respected one another. He taught me a lot about life in general. Linda and Michael and family I am so sorry for your loss I will miss this man greatly.
